The Company and the Role:
Amazing full time permanent Head Chef opportunity with a fantastic niche Hotel in Newbury, offering you the chance to build your reputation and kitchen team as a Rosette level restaurant of excellence.
This 4 Star Hotel caters for breakfast, lunch and dinner, they also provide private functions and corporate event catering on site, as well as drawing in tourist trade and local dinners.
The Hotel owners are looking to bolster their Hotel business through private events, themed functions and corporate events, where menus can and will be creative wherever possible.
The Company offers full marketing back up and support for the brand, and as Head Chef you will be in charge of the day to day running of the kitchen and take responsibility for the menu items that your team produce from fresh and local produce.


Key Features of the Role:
As Head Chef you will ensure the efficient and effective running of the kitchen team, planning and implementing all of the new and existing menus.
You will ensure that the preparation and presentation of the food is to a high Rosette standard and complies with food safety regulations throughout the hotel food outlets.
You will supervise, train and motivate your team to achieve the company standards, and also comply with Food and Health and Safety regulations. Maintain HACCP files, and Food Safety Policy files, COSHH, Health and Safety at Work etc.
You will be responsible for the achievement of budgeted food gross profit.
Liaise with other stakeholders such as the General Manager, Heads of Department, Financial Controller, Customers and Directors, as well as managing and developing your own team.
You will also be in control of breakages, ensuring stock level is maintained, as well as the cleanliness factor and all necessary kitchen reports.


Knowledge and Skills:
As Head Chef you will need to have current experience of running your own kitchen or restaurant and managing a team, as well as being able to effectively delegate to make things happen.
You must be flexible and able to adapt quickly, as well as having forethought, considering potential future developments and planning for them.
You must have a proven and respectful kitchen / restaurant communication background, be used to taking and giving orders, both verbally and written.
You must be creative and have the ability to look for fresh new ideas, as well as inspire or encourage others to come up with realistic solutions, and then naturally lead it to conclusion.
You must be able to work with Microsoft Office packages and have experience collecting and analysing margins, profit and loss, stock inventory, rota set up and logged working hours for the team.
You must have current experience of working in a restaurant or kitchen based environment where you make conscious decisions and take required actions (positive or negative), for the benefit of the business.
You must be an emotionally robust individual who takes responsibility for making things happen and accepts responsibility when things don't go to plan.
You must also have a character that is constantly reviewing and looking to improve processes, training, team development, cooking techniques, assessing seasonal produce, local produce and other alternative fresh produce from suppliers.
You must be able to be open and honest, able to treat people fairly, respect confidences and adhere to legal obligations. So knowledge and prior experience of COSHH, Healt
