Amazing Sous Chef opportunity with a sustainable and professional fresh food restaurant. Supporting the Head Chef and Brigade team with Lunchtime and Dinner services, based in Winchester within an established and well-known brand.

Looking for a catering professional who will share the company and brand passion for great food.

As a Sous Chef you will be expected to be passionate about working with fresh ingredients.

As well as being able to take direction from the Head Chef and other co-workers to make sure service runs efficiently and effectively, so that guests are not impacted in a negative manner.

You will be someone who is looking to develop their own skills and abilities with career aspirations for promotion, as well as supporting and developing others in your Brigade.

Key Features of the Role:

As Sous Chef, you are in a position of responsibility and a figure head or mentor for others, as you will lead the Kitchen in the absence of the Head Chef.

You will take direction from the Head Chef, carrying out your everyday duties and responsibilities, (including food preparation). Ensuring dating and labelling of produce. Monitoring stock and wastage.

The Brigade comprises 6 to 9 kitchen staff of various levels, serving up to 90 covers and potential two sittings for lunch and dinner.

Shifts are made up of split shifts and straight shifts, spread evenly across the Brigade. With the earliest start at 8:00, with the restaurant closing at 22:00, Monday to Friday. Weekend opening hours are 12:00 till 22:00.

You will have a 45 hours per week contract with the opportunity for paid overtime, on average staff can work 50 / 55 hours per week during busy seasonal periods.

The restaurant offers fish and seafood along with classic dishes, with a British, Mediterranean and Asian influences. All cooked using fresh and sustainable ingredients.

Knowledge and Skills:
You must have worked in a Brigade or kitchen with experience of fresh food preparation, working with and cooking, fish, vegetables and meats in a busy restaurant environment.
The Company is looking for someone who has worked their way through the levels of a Brigade in a similar restaurant environment, and who has attained either a Senior Chef de Partie or Sous Chef level.
Catering qualifications and training would be ideal, but are not essential, as long as employment tenures show career development and learning.
You must be able to communicate respectfully and work with a team in a positive manner, no matter what the situation or pressure.
Food preparation, monitoring stock and wastage, ensuring dating and labelling of produce, assisting with scheduling and staff development.
