The Company and the Role:
The Company is possibly the most talked-about group of hotels to emerge in recent years, seeking a permanent Head Sommelier for their award-winning hotel and restaurant on the South Coast in Dorset.
The Company's hotels are more like a restaurant with rooms and kitchen garden. The concept was created in 2011 and has been recognised with many accolades and industry awards.
The Company is still expanding with new openings in the pipeline. Their ethos is to want to give their staff a great place to work that is fun, professional and just a little bit different, with bags of opportunity.
As Head Sommelier you will be responsible for managing, training and developing the Sommelier team, offering support and a role model persona, as well as coaching and developing your team's career path.
The group are not looking for the traditional and formal Sommelier type, they want professionals who will and can engage with guests and interact in a less stuffy, 4 star hotel environment, which will then add to the guest's experience.

Key Features of the Role:
Ensuring all areas are properly stocked and set up ready for service
Ensuring an effective wine and beverage service in the restaurant at all times
Full knowledge of the wine list in order to assist guests with their choices, being able to make appropriate recommendations where necessary
Being aware of all bookings and any guest special requirements
Updates to the hotel wine selections and listings
Run any wine tasting sessions as required by the team
Resolving any guest queries relating to the wine and drink service
Ensuring the maintenance and cleanliness of all wine service equipment
Carry out any wine training as requested by Front of House Team Members
Stock and inventory control

Knowledge and Skills:
You should have a passion for wines and spirits and have a friendly and warm persona, as well as someone who is ambitious, as new venues are opening next year and this is an ideal opportunity and time to get on-board.
Bringing all your previous experience and knowledge as a Senior or Head Sommelier is required, but this hotel does not do wine snobbery or stuffiness, but you should still have a passion for wines and a desire to aim for high standards.
You must have completed a recognised study in wine and spirits, WSET's etc. In return the hotel will provide you with any other qualifications that might be required.
You will use your knowledge of restaurant menus and drinks parings, as well as your management and team leadership skills on a daily basis, so you can effectively and efficiently run the award-winning restaurant.
You will be fully knowledgeable of the menus, recipes and all beverage offerings.
You should have a good understanding of cost control and an understanding of wine GP%.
You will be a great team player with good organisational skills with the ability to thrive in a very busy hotel and restaurant, where the Company's reputation for serving good quality wines alongside consistently preparing, cooking and presenting dishes to the right quality, is second to none.

What's on Offer?
A basic salary of �26 - �31k per annum depending upon your knowledge and wine qualification, plus Tronc worth around �2500 per annum. A Live In option is available subject to a personal contribution towards the rent.
