This extremely popular 2 Rosette Hotel in Cambridge is searching for an experienced Head Chef to supervise and co-ordinate the smooth running of the kitchen for the entire food and beverage operation according to business requirements ensuring that the standard of 2AA Rosettes is maintained and that the kitchen is run effectively, efficiently, profitably and with passion. The team consists of 8/9 full time chefs to include Sous Chef, Pastry Chef, Chef de Parties, Demi Chef de Parties, Commis Chefs as well as Kitchen Porters
Duties to include:
To produce all menus: � la carte, caf � bar, lunch, room service and banqueting together with daily specials for the � la carte restaurant.
To write and check standard recipes for all dishes to ensure proper portion control, uniformity of state and quality and ensure that all chefs take responsibility for this within their own sections.
To check on a daily basis food preparation, individual costs, quality, quantity, inventories and agreed portion control
To maintain wages within budget as a percentage of overall food sales by means of weekly wage forecasts
To ensure that high standards of cleanliness are maintained in all areas of the kitchen and outside areas that these standards exceed statutory requirement wherever possible.
To observe the legal requirements in respect of health and safety
To ensure that the standards set by the company`s policy and procedures regarding personal hygiene are maintained by all kitchen staff
To lead by example, supervise, train and motivate the team, maintain good employee relations as well as maintain discipline
All suitable applicants will have, City and guilds 706/1/2/3 or similar qualification, NVQ 1/2/3 and Food Hygiene certificate - preferably at Advanced level
Functional skills, knowledge and experience
A very good knowledge of classic French, British and International cuisines, and pastry work and experience of kitchens at 2 rosettes and above
Kitchen administration and banqueting experience in a similar position for at least four years.
Experience of a POS system
IT literate - able to produce Excel spreadsheets, use Microsoft Outlook and Word
Knowledge of health and safety regulations
Social Skills and experience of dealing with staff
Able to motivate himself/herself and have a good rapport with staff throughout the hotel
Be able to carry out formalised training of staff
