A new and exciting opportunity awaits an accomplished and creative Head Chef to join our team and assume the newly created position of Brasserie Head Chef within the Brasserie at the Fulham Pier.You will lead a talented team of chefs, and partnered with the Executive Head Chef you will design and develop innovative seasonal menus that showcase and reflect the restaurant's ethos, focusing on modern Brasserie-style cuisine and fresh, local ingredients.The restaurant will have a unique identity and therefore the role requires a unique Head Chef who can stay on top of the latest industry trends, cater to a variety of tastes, and create and serve a range of high-quality dishes with your own brand of personality and flair, to a clientele who expect only the best.The Fulham Pier will become the heart of the community and the standard bearer for indulgent experiences, which will attract both Londoner’s and tourist from all over the world.We are exceptional hosts and independent champions, curating authentic brands that are dreamed up and run with passion.We have a remarkable selection of food and drink experiences, ranging from, Pop-up bars and pop-up local cuisine, to elegant fine dining experiences.Our entertainment options are as exceptional as our dining experiences, and we cater for all tastes and moods. We offer local theatre, outdoor gigs, jazz clubs, an art gallery, cooking classes, a comedy club, book launches, film nights and water sports, to name but a few. Whether it’s saluting the sun in the morning with riverfront yoga or toasting the night with a magical cocktail we are building a playground for the senses!MAIN RESPONSIBILITIESOversee all culinary operations of the Brasserie, ensuring the delivery of high-quality, innovative, and on-trend dishes.Ensure the kitchen delivers high volumes of food during peak times while maintaining the highest standards of consistency and quality.Ensure compliance with all health, safety, and food hygiene regulations, including allergen management.Train and mentor, the kitchen team, ensuring a focus on development, engagement, and retention.Control kitchen costs, including food costs, labour, and waste, ensuring profitability and efficiency.Collaborate with front-of-house staff to ensure smooth service and exceptional guest experiences.Participate in menu tastings, reviews, and adjustments based on customer feedback and trends.Ensure efficient kitchen management, cost control, and compliance with all food safety regulations, while maintaining a focus on delivering an outstanding guest experience.Managing food costs, waste reduction, and staff efficiency are critical to success.THE IDEAL CANDIDATEYou will be a renowned expect in the hospitality industry. The Brasserie offers casual yet refined dining with a focus on quality and therefore you will have experience in managing culinary operations in Michelin Star dining establishments as well as extensive menu development expertise.You will possess exceptional leadership skills the ability to deliver the quality of service that will contribute to the overall atmosphere of Fulham Pier, providing an elegant and remarkable experience for all guests.You will also have:Strong creative skills with experience in identifying target audiences.Excellent business relationship skillsCommercial minded with evidence of successfully managing costs in line with exceptional delivery.Experience of ensuring profit margins and targets are met or exceeded.A solid background in working with key stakeholders internally and externally to achieve targets.Understanding of launching and activating new hospitality spaces.Experience in financial/budget reporting and commercial understanding.Strong team management and leadership skills, with the ability to motivate and develop your team.Supervising Food Safely Level 3 qualification or equivalent.IOSH Managing Safely or similar qualifications.The flexibility to work 5 over 7.WHAT WE OFFERYou will be rewarded with a salary of between £60,000 and £70,000 plus access to a range of EXCELLENT benefits, including:15% performance-related bonus£1,300 flexi benefit fundEmployer pension contributionLife assuranceFor more information on all the great benefits Sodexo offer to support you and your loved ones, check out the attached Benefits Guide at the bottom of this advert!We’re a Disability Confident Leader employer.
